Creamy Tuscan Chicken Dinner Recipe


Creamy Tuscan Chicken.

Ingredients:


- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1/2 cup sun-dried tomatoes, chopped
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach leaves
- Fresh basil leaves for garnish (optional)


Instructions:


1. Season the chicken breasts with salt and pepper on both sides.


2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook until golden brown on both sides and cooked through, about 6-8 minutes per side. Remove the chicken from the skillet and set aside.


3. In the same skillet, add the minced garlic and cook for about 1 minute until fragrant.


4. Add the cherry tomatoes, sun-dried tomatoes, dried oregano, dried thyme, and dried basil to the skillet. Cook for another 2-3 minutes until the tomatoes start to soften.


5. Pour in the chicken broth and bring to a simmer. Allow the broth to reduce slightly, about 2-3 minutes.


6. Stir in the heavy cream and grated Parmesan cheese. Cook for another 2-3 minutes until the sauce thickens.


7. Add the fresh spinach leaves to the skillet and cook until wilted, about 1-2 minutes.


8. Return the cooked chicken breasts to the skillet and spoon the creamy Tuscan sauce over them. Allow the chicken to heat through for another minute.


9. Garnish with fresh basil leaves if desired, then serve the Creamy Tuscan Chicken hot.
