Decadent Chocolate Lava Cake
Ingredients:
- 1/2 cup unsalted butter
- 4 ounces semi-sweet chocolate, chopped
- 2 large eggs
- 2 large egg yolks
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 tablespoons all-purpose flour
- Pinch of salt
- Powdered sugar, for dusting
- Vanilla ice cream or whipped cream, for serving (optional)
Instructions:
- Preheat your oven to 425°F (220°C). Grease four ramekins or small oven-safe dishes with butter and dust them lightly with flour, tapping out any excess flour.
- In a microwave-safe bowl, melt the butter and chopped semi-sweet chocolate together in 30-second intervals, stirring each time, until smooth and well combined. Alternatively, you can melt them together using a double boiler on the stove. Let the mixture cool slightly.
- In a separate mixing bowl, whisk together the eggs, egg yolks, granulated sugar, and vanilla extract until well combined and slightly thickened.
- Slowly pour the melted chocolate mixture into the egg mixture while whisking continuously until smooth.
- Sift the all-purpose flour and salt into the chocolate mixture, and gently fold them in until just combined. Be careful not to overmix.
- Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.
- Place the ramekins on a baking sheet and bake in the preheated oven for 10-12 minutes, or until the edges are set but the center still looks slightly jiggly.
- Carefully remove the lava cakes from the oven and let them cool in the ramekins for 1-2 minutes.
- To serve, run a knife around the edges of each ramekin to loosen the cakes. Invert each cake onto a serving plate, tapping gently if needed to release them. Dust with powdered sugar and serve immediately with a scoop of vanilla ice cream or whipped cream if desired.
