Lemon Garlic Roast Chicken.


Ingredients:

- 1 whole chicken (about 4-5 pounds)

- 4 cloves of garlic, minced

- Zest and juice of 2 lemons

- 2 tablespoons olive oil

- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

- 1 tablespoon fresh rosemary leaves (or 1 teaspoon dried rosemary)

- Salt and pepper to taste

Instructions:

1. Preheat your oven to 425°F (220°C). Place a rack in a roasting pan or a baking dish.

2. Rinse the chicken inside and out under cold running water, then pat dry with paper towels. Place the chicken on the rack in the roasting pan.

3. In a small bowl, mix together the minced garlic, lemon zest, lemon juice, olive oil, thyme, rosemary, salt, and pepper to form a paste.

4. Rub the lemon garlic mixture all over the outside of the chicken, making sure to coat it evenly.

5. If desired, you can also gently lift the skin of the chicken and rub some of the mixture underneath for extra flavor.

6. Tie the legs of the chicken together with kitchen twine and tuck the wingtips under the body of the chicken.

7. Roast the chicken in the preheated oven for about 1 hour and 15 minutes to 1 hour and 30 minutes, or until the juices run clear and the internal temperature reaches 165°F (75°C) when measured with a meat thermometer inserted into the thickest part of the thigh.

8. Once cooked, remove the chicken from the oven and let it rest for 10-15 minutes before carving.

9. Carve the chicken and serve hot with your favorite sides, such as roasted vegetables or mashed potatoes.
