Creamy Mushroom Chicken

Ingredients

- 4 boneless, skinless chicken breasts

- Salt and pepper to taste

- 2 tablespoons olive oil

- 8 ounces (225g) mushrooms, sliced

- 4 cloves garlic, minced

- 1 cup chicken broth

- 1 cup heavy cream

- 1 teaspoon dried thyme

- 1/2 teaspoon paprika

- Chopped fresh parsley for garnish

Instructions

1. Season the chicken breasts with salt and pepper on both sides.


2. Heat olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts to the skillet. Cook for 5-6 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.


3. In the same skillet, add sliced mushrooms and minced garlic. Cook for 4-5 minutes until the mushrooms are golden brown and tender.


4. Pour chicken broth into the skillet, scraping up any browned bits from the bottom. Let it simmer for 2-3 minutes.


5. Stir in heavy cream, dried thyme, and paprika. Bring the mixture to a simmer and let it cook for another 2-3 minutes until the sauce thickens slightly.


6. Return the cooked chicken breasts to the skillet, spooning the creamy mushroom sauce over them. Let everything simmer together for another 2-3 minutes to heat through.


7. Serve the creamy mushroom chicken hot, garnished with chopped fresh parsley. Enjoy this indulgent and savory dish with your favorite sides!
