Lemon Garlic Butter Shrimp Pasta

Ingredients:


8 oz (225g) pasta of your choice (linguine or fettuccine work well)


1 lb (450g) large shrimp, peeled and deveined


4 tablespoons unsalted butter


4 cloves garlic, minced


1/4 cup (60ml) chicken or vegetable broth


1 lemon, zest and juice


Salt and pepper to taste

Red pepper flakes (optional)


Fresh parsley, chopped, for garnish


Grated Parmesan cheese (optional)


Instructions:


Cook the pasta according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.
In a large skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and cook for about 1 minute, until fragrant.
Add the shrimp to the skillet and cook for 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
In the same skillet, add the remaining 2 tablespoons of butter and the chicken or vegetable broth. Stir in the lemon zest and juice. Season with salt, pepper, and red pepper flakes if using.
Add the cooked pasta to the skillet and toss to coat it evenly with the lemon garlic butter sauce. If the sauce is too thick, you can add some of the reserved pasta water to thin it out.
Return the cooked shrimp to the skillet and gently toss to combine with the pasta. Cook for another minute until everything is heated through.
Remove from heat and garnish with chopped parsley and grated Parmesan cheese if desired.
