Classic Spaghetti Carbonara Recipe
Ingredients:
- 12 ounces spaghetti
- 2 large eggs
- 1 cup grated Parmesan cheese
- 4 ounces pancetta or bacon, diced
- 2 cloves garlic, minced
- Salt and freshly ground black pepper to taste
- 2 tablespoons fresh parsley, chopped (optional)
Preparation:
1. Cook the Pasta:
- Bring a large pot of salted water to a boil.
- Add the spaghetti and cook until al dente, according to the package instructions.
- Reserve 1 cup of the pasta cooking water, then drain the spaghetti.
2. Prepare the Sauce:
- In a medium bowl, whisk together the eggs and grated Parmesan cheese until well combined. Set aside.
3. Cook the Pancetta/Bacon:
- In a large skillet over medium heat, cook the pancetta or bacon until it is crispy, about 5-7 minutes.
- Add the minced garlic and sauté for another minute until fragrant.
4. Combine the Ingredients:
- Remove the skillet from heat.
- Add the hot, drained spaghetti to the skillet with the pancetta and garlic. Toss to combine.
- Quickly pour the egg and cheese mixture over the pasta, tossing rapidly to ensure the eggs do not scramble. The heat from the pasta will cook the eggs, creating a creamy sauce.
- If the pasta seems too dry, add some of the reserved pasta water, a little at a time, until you reach the desired consistency.
5. Season and Serve:
- Season the carbonara with salt and freshly ground black pepper to taste.
- Toss in the chopped parsley if using.
- Serve immediately, garnished with additional grated Parmesan cheese if desired.
