Classic Spaghetti Carbonara: A Quick and Delicious Dinner Delight

Classic Spaghetti Carbonara Recipe

Ingredients:

  • 12 ounces spaghetti
  • 2 large eggs
  • 1 cup grated Parmesan cheese
  • 4 ounces pancetta or bacon, diced
  • 2 cloves garlic, minced
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons fresh parsley, chopped (optional)

Preparation:

1. Cook the Pasta:

  1. Bring a large pot of salted water to a boil.
  2. Add the spaghetti and cook until al dente, according to the package instructions.
  3. Reserve 1 cup of the pasta cooking water, then drain the spaghetti.

2. Prepare the Sauce:

  1. In a medium bowl, whisk together the eggs and grated Parmesan cheese until well combined. Set aside.

3. Cook the Pancetta/Bacon:

  1. In a large skillet over medium heat, cook the pancetta or bacon until it is crispy, about 5-7 minutes.
  2. Add the minced garlic and sauté for another minute until fragrant.

4. Combine the Ingredients:

  1. Remove the skillet from heat.
  2. Add the hot, drained spaghetti to the skillet with the pancetta and garlic. Toss to combine.
  3. Quickly pour the egg and cheese mixture over the pasta, tossing rapidly to ensure the eggs do not scramble. The heat from the pasta will cook the eggs, creating a creamy sauce.
  4. If the pasta seems too dry, add some of the reserved pasta water, a little at a time, until you reach the desired consistency.

5. Season and Serve:

  1. Season the carbonara with salt and freshly ground black pepper to taste.
  2. Toss in the chopped parsley if using.
  3. Serve immediately, garnished with additional grated Parmesan cheese if desired.

Enjoy your Spaghetti Carbonara!
